Chef: Mina Risotti – DUCK BREAST IN MOSCATO D’ASTI WITH RAISINS AND SEMOLINA

Recipe for 4:

For the semolina:

1/2 litre milk
150 g sugar
1/2 vanilla bean
120 g durum wheat semolina
1 egg
breadcrumbs
olive oil for frying

For the duck breast:

1 duck breast ( 600/700 g)
1 tablespoon Moscato docg raisins
30 g extra-virgin olive oil
300 ml Moscato d’Asti docg.

For the semolina, heat the milk with sugar and the vanilla bean to a boil. Once brought to a boil remove the vanilla bean and, stirring continuously, slowly pour in the durum wheat semolina. Simmer for 10 minutes and, once the mixture has thickened, remove from the stove. Add the egg and keep stirring vigorously. Pour the mixture into a buttered baking-tin and let cool down in the fridge. Before serving, cut into lozenges, roll them in the breadcrumbs and fry on both sides. For the duck breast, clean the breast and carve two slantwise notches on the skin side. Heat the oil in a pan, then brown the breast by sautéing it for about 4 minutes per side. Drain off the oil and melted fat and put the breast back in the pan with the raisins. Simmer with the Moscato and cook over medium heat for about 10 minutes per side. Once cooked, remove the breast from the pan and let it rest for a few minutes; meanwhile reduce the gravy in the pan with the Moscato until it thickens. slice the duck breast, arrange the slices on the serving plate and then pour over the thick Moscato and raisin gravy. Garnish with a warm semolina lozenge.

PS: beside the quality of the duck breast, which should be from a free-ranging fowl, a key factor for a good result is the quality of the wine, which has to be a MOSCATO D’ASTI DOCG of the current year. In this way the flavour of the gravy will not be altered.

The same applies to the raisins: whenever possible, choose Moscato raisins, dried with traditional methods. And they’re only good if they still have the grape-seeds.
